Peanut Butter Chocolate Chip Protein Balls
Lately I have been seriously struggling in the snack department! Hudson and I have both been craving sweets and when I cam across this recipe I decided to give it a try! I have made it three times since and we LOVE them! Last weekend we brought them on our road trip for our snack and it was the bomb! It is the perfect treat to curb your sweet tooth! It tastes like a no bake but healthier haha! The recipe is below! Comment if you try it and tell me what you think!
-1/4 cup peanut butter (we use natural peanut butter)
-1 cup old fashioned oats
-1/4 cup of honey (the first time I tried it with a third cup and thought it was too sweet and it was harder to form so now I use 1/4 cup)
-1/4 cup semi sweet chocolate chip
-1/2 tsp vanilla
-Mix all of the ingredients together in a large bowl. Make sure to get all of the oats coated in peanut butter and honey.
-Cover and refrigerate for at least 30 minutes. (The longer you cool the easier it is to form the balls! I typically do 1-2 hours)
-Use a spoon or a scoop to form the balls. I roll a scoop of the mix back and forth in my hands until its a golf ball shape and that seems to work best.
-Place in a container and store in the refrigerater!
